Endive Orange and Basil Salad



This salad is light and refreshing. It has the crisp, bitter taste of endive, the sweetness of oranges, and the fresh, fragrant scent of basil. This Paleo, gluten-free, and vegan salad is a great way to eat well and stay healthy.

Ingredients:

  • 2 endive heads, separated into leaves
  • 2 large oranges, peeled and segmented
  • 1/2 cup fresh basil leaves
  • 1/4 cup chopped walnuts
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions:

In a large salad bowl, arrange the endive leaves

Add the orange segments and fresh basil leaves on top of the endive

Sprinkle the chopped walnuts over the salad

In a small bowl, whisk together the olive oil and balsamic vinegar to make the dressing

Season with salt and pepper

Drizzle the dressing over the salad just before serving

Toss gently to combine all the ingredients
