These mango salsa-grilled chicken skewers are full of flavor and great for any event, not just a summer barbecue. A mix of spices is used to marinate the chicken. It is then grilled until it's juicy and served with a cool mango salsa.
Ingredients:
- 1 lb boneless, skinless chicken breast, cut into chunks
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 ripe mangoes, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeo, seeded and diced
- Juice of 1 lime
Instructions:
In a bowl, toss chicken with olive oil, paprika, garlic powder, cumin, salt, and pepper until evenly coated
Thread chicken onto skewers
Preheat grill to medium-high heat
Grill skewers for 5-7 minutes per side, or until chicken is cooked through and slightly charred
In another bowl, combine diced mangoes, red onion, cilantro, jalapeo, and lime juice to make the salsa
Serve grilled chicken skewers with mango salsa on the side
