Healthy Applesauce Pancakes



These applesauce pancakes are tasty and good for you. They are naturally sweetened with applesauce and are full of whole grains. They are a healthy and filling way to start the day, and they don't have any added sugar.

Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 1 cup low-fat buttermilk
  • 1 large egg
  • 1 tsp vanilla extract
  • Cooking spray for the pan

Instructions:

Mix the rolled oats, baking powder, baking soda, salt, and ground cinnamon together in a large bowl

Mix the apple sauce that hasn't been sweetened, low-fat buttermilk, egg, and vanilla extract in a different bowl using a whisk

Add the wet ingredients to the dry ones and mix them together just until they are mixed

There should be some lumps, but not too many

Warm up a nonstick griddle or skillet over medium heat and spray it with cooking spray

Put about 1/4 cup of the pancake batter at a time onto the hot pan and spread it out into a circle

Once the pancakes start to bubble on top, flip them over and cook for another one to two minutes, or until they are golden brown and fully cooked

Add more cooking spray if needed and do it again with the rest of the batter

If you want, you can serve the healthy applesauce pancakes warm with fresh fruit or a dollop of Greek yogurt on top
