A nutritious and flavorful combination of quinoa, kale, and stewed tomatoes, infused with aromatic herbs and spices. A perfect dish for a quick and wholesome meal.
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups kale, chopped
- 1 can 14 oz diced tomatoes
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 cups vegetable broth
Instructions:
Put olive oil in a medium-sized pot and heat it over medium-low heat
Put in the garlic and chopped onions
Saut until the onions become clear
Add the quinoa and stir it in
Cook for two minutes to let it toast a bit
Dice the tomatoes and add them to the pan
Then add the paprika, salt, and pepper
Combine well
Add the vegetable broth and boil it
Turn down the heat, cover, and let it cook slowly for 15 minutes
Add the chopped kale and stir it in
Simmer for another 5 to 7 minutes, or until the kale is soft
If you need to, change the seasonings and serve hot
