Vegan Lentil Loaf



This vegan lentil loaf is a hearty main dish that would be great for Christmas dinner. It's full of protein and tastes great, so both vegans and non-vegans will love it!

Ingredients:

  • 2 cups cooked lentils
  • 1 cup rolled oats
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 celery stalk, finely chopped
  • 1/4 cup tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions:

Warm the oven up to 190C 375F

Use a fork or potato masher to mash the cooked lentils in a large bowl

Put in tomato paste, soy sauce, maple syrup, thyme, oregano, smoked paprika, salt, and pepper

Also add rolled oats and mix well

Combine well by mixing

Put the dough into a loaf pan that has been lined with parchment paper and press it down hard to make a loaf

Put it in the oven for 40 to 45 minutes, or until the top is firm and a little crispy

Wait a few minutes before cutting it up and serving it

Put your favorite sides on top of your vegan lentil loaf and enjoy!
