A creamy and cheesy vegan pasta dish loaded with savory mushrooms. This plant-based comfort food is sure to satisfy your cravings!
Ingredients:
- 8 oz pasta gluten-free if needed
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 8 oz mushrooms, sliced
- 1 cup vegetable broth
- 1 cup unsweetened almond milk
- 1/4 cup nutritional yeast
- 1 tbsp soy sauce
- 1 tsp Dijon mustard
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions:
Cook pasta according to package instructions
In a large pan, heat olive oil over medium heat
Add onion and garlic, and saut until softened
Add mushrooms and cook until they release their liquid and begin to brown
Stir in vegetable broth, almond milk, nutritional yeast, soy sauce, and Dijon mustard
Bring to a simmer and cook for 5-7 minutes, until slightly thickened
Season with salt and pepper to taste
Add cooked pasta to the sauce and toss to coat
Serve garnished with fresh parsley
