Ingredients:
- 1 1/2 cups pecans
- 1 cup vegan chocolate chips
- 1 cup coconut cream
- 1/2 cup maple syrup
- 1/4 cup coconut oil
- 1/4 cup cocoa powder
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 1 vegan pie crust
Instructions:
Preheat oven to 350F 175C
Spread pecans on a baking sheet and toast in the preheated oven for 8-10 minutes
Let them cool, then chop roughly
In a saucepan, combine coconut cream, maple syrup, coconut oil, cocoa powder, and salt
Cook over medium heat, stirring constantly, until well combined and smooth
Remove from heat and stir in the vanilla extract and half of the toasted pecans
Spread the remaining pecans and chocolate chips on the bottom of the pie crust
Pour the chocolate mixture over the pecans and chocolate chips
Bake in the preheated oven for 25-30 minutes, or until the filling is set
Let the pie cool completely before serving
Sprinkle with sea salt before serving, if desired
